Roasted Mushroom Salad
Ingredients:
1 pound
white button mushrooms, halved or quartered
1 tablespoon
olive oil
1 teaspoon
lemon juice
3/4 cup
finely chopped red bell pepper
1/2 cup
fresh basil or mint leaves, torn
1/4 cup
pine nuts, toasted
4 leaves
Boston lettuce
2 tablespoons
extra-virgin olive oil
1 tablespoon
balsamic vinegar or lemon juice
Stuffed peppers - Hot Iron
Ingredients:
½ or 1 Ramiro pepper per person – choose fairly straight ones if you can
Vegetarian pesto, olive tapenade or sundried tomato paste
A little cheese, cut into very small cubes (I used feta, which holds its shape, but Mozzarella pearls are ideal, too)
A few capers or chopped olives
A few small cherry tomatoes, halved
A few pine nuts or halved walnuts, cashews or pecans
