Ingredients:
14oz plain flour
2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1 tsp salt
12oz sugar
4 eggs
175 ml oil, a mild flavoured one not olive oil
4oz raisins
14oz raw grated courgette
Mix together the dry ingredients.
Mix together the eggs and oil and then add to the dry ingredients.
Add the raisins, walnuts and courgette and mix all together well.
Pour into two loaf tins and cook at 180◦C for about 60 mins, or until a skewer comes out clean.
Although to cool before tucking in.
If you can’t eat 2 cakes straight away, pop one in the freezer for later.
