Ratatouille

 
 
Ingredients:
 
Dash olive oil (or any vegetable oil)
1 large onion, chopped roughly
3 peppers, cut into large strips (preferably one each of red, green, yellow)
1 courgette, cut into batons 
2-4 cloves garlic, crushed
1 heaped teaspoon each dried oregano and basil (or fresh)
Good pinch salt and pepper
4-6 fresh ripe tomatoes, chopped (or 1 x 400g/14oz tin)
 
 
Put oil in a large pan on medium heat, add the onion and stir 2-3 minutes until it softens. Chop and add peppers and courgette and stir regularly for 4-5 minutes. Add the garlic, herbs, seasoning, chop and tomatoes. Stir for 3 minutes, add a lid and remove from the heat and leave to stand for 3 minutes before serving.
